Variations

This soup freezes very well. Portion it into any freezer-safe airtight container and it will keep for up to six months. To re-warm, place a small amount of water into saucepan (this will prevent scorching) then empty the frozen soup from the container into the pan and warm gradually. Make sure to stir the soup occasionally. If you’re in a real hurry, you can simply “nuke it” in the microwave. The most important thing is not let the soup come to a boil or it will lose it’s creamy texture. For those who like spicy foods, you can add Tabasco, or any other hot sauce that you prefer either while the soup is cooking or after you have dished it out.
