Instructions - Very Veggie

You will need

2.5 litres (10 cups of water)
Salt & Pepper to taste
Your choice of Vegetables

In a large saucepan, heat water to boiling. Add all of the soup mix, reduce heat to med-low, cover and simmer for 45 minutes. Add vegetables of your choice and simmer for another 15 minutes or until vegetables are of desired tenderness. Season to taste.

Variations

For more of a tomato broth, use equal amounts of water and tomato juice or V8 juice.
Tabasco or any other hot sauce goes real well in this soup. If you don’t normally use hot sauces, but want to try, it is best to add a couple of drops at a time, stir, taste and add more if needed. Once it’s in there, there’s no taking it out.

Vegetables; for those who love garlic, a couple of fresh crushed and diced cloves works real well. A cup of sliced, diced or shredded zucchini is awesome. ¼ to ½ cup of any diced or shredded root vegetables, i.e. Carrots, turnip, parsnip, beets …….
My personal favourite for this soup is to use it as a base and then toss in my leftovers that have been collecting in the fridge over the last few days. Little bits of celery, 2 green onions, half of a chicken breast, 2 sausages and a bowl of KD. It’s never the same soup twice.
