Split Pea Soup
For those who enjoy Split Pea Soup, this is a must have !! The flavour is
rich, full, and ready in an hour. All you need to add is a couple of cups
of diced fresh or left-over ham and "voila" pea soup that rivals
what usually takes twice as long to accomplish. But, don't limit yourself
to just ham. Any type of smoked meat makes a great addition and depending
on what you use, you can come up with a variety of combinations that will
delight your tastebuds every time. Best of all, it's even better on the
second day!
This soup also freezes
well !! So if a full pot is to much, or you want to save some for another time,
just portion it into any freezer-safe sealable container and you will have pea
soup on hand that will keep in the freezer for three months. You can re-warm
it by either adding a couple of tablespoons of water to prevent scorching, and
then empting the frozen soup directly into the pot, or let the soup de-frost
over night in the fridge, then warm it the next day. Or, if you are in a hurry,
just nuke it in the microwave! The secret is not to let it over heat, and it
will keep it's creamy texture just as if it were freshly made.
