Split Pea Soup

Split Pea Soup For those who enjoy Split Pea Soup, this is a must have !! The flavour is rich, full, and ready in an hour. All you need to add is a couple of cups of diced fresh or left-over ham and "voila" pea soup that rivals what usually takes twice as long to accomplish. But, don't limit yourself to just ham. Any type of smoked meat makes a great addition and depending on what you use, you can come up with a variety of combinations that will delight your tastebuds every time. Best of all, it's even better on the second day!

Split Pea Soup This soup also freezes well !! So if a full pot is to much, or you want to save some for another time, just portion it into any freezer-safe sealable container and you will have pea soup on hand that will keep in the freezer for three months. You can re-warm it by either adding a couple of tablespoons of water to prevent scorching, and then empting the frozen soup directly into the pot, or let the soup de-frost over night in the fridge, then warm it the next day. Or, if you are in a hurry, just nuke it in the microwave! The secret is not to let it over heat, and it will keep it's creamy texture just as if it were freshly made.
